MANDARIN ASPARAGUS

     
     

 

 
  1 lb+ fresh asparagus spears
.5 C light soy sauce
.5 C good, flavorful sesame oil
Splash+ Chinese hot chili oil
Spoon lightly toasted sesame seeds
   
  1. Trim base and any tough portion from asparagus spears and cut into approximately 2" lengths.
  2. Bring large pot of water to rapid boil. Add cut asparagus and boil for no more than 2 minutes. (It is best if spears do not vary too widely in thickness).
  3. Remove spears and place immediately in iced or very cold water.
  4. When throughly cool, pat quite dry and place in suitable serving bowl.
  5. Whisk together soy, sesame and chili oils. Taste and balance dressing accordingly.
  6. Pour over asparagus and toss.
  7. Refigerate until ready to serve, perhaps tossing once in interim. Toss again before serving and garnish with lightly toasted sesame seeds.
